After six months of development and more test batches than we care to count, we’re thrilled to introduce our third expression: Wild Bramble & Rosemary.

This one started with a foraging trip to the Sussex Downs last autumn. We came back with kilos of wild brambles and the beginning of an idea. The challenge was finding the right counterpoint - something that would cut through the sweetness of the fruit without overwhelming it. We tried juniper. We tried thyme. We tried black pepper. Nothing quite worked until Tom pulled a sprig of rosemary from the garden and dropped it into a test batch almost as an afterthought.

It was immediately right.

The final recipe uses wild brambles foraged from the hedgerows of Sussex and rosemary from our kitchen garden. It’s darker and more savoury than our other two expressions - the sort of drink you reach for in the evening rather than at lunch.
